- 4 cups old-fashioned oats (not quick oats)
- 1 1/2 cups sliced or slivered almonds
- 1 1/2 cups pecans
- 1/2 cup brown sugar
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 canola oil
- 1/4 honey
- 1 tsp vanilla
- 1 1/2 cups raisins or other dried fruit (optional)
Preheat oven to 300. In a (very) large bowl, mix oats, nuts, brown sugar, salt and cinnamon. Heat the oil and honey on medium power in microwave until warm but not bubbling. Stir in vanilla. Carefully pour liquid over oat mixture. Stir gently until well coated.
Spread granola on a large sheet pan. Bake 45 minutes, stirring every 15 minutes, until granola is slightly golden brown. Cooking time varies, depending on size of pan. Be sure to stir every 15 minutes.
Transfer pan to wire rack and cool completely. Stir in any dried fruit if you desire. Store in airtight container. Will last approx 1 week at room temp, and up to 3 months in freezer.
